Why do colleges look for a diversity of classes in my high school schedule? It seems like they should be more concerned with one's ability to do well in an area, since that is what college is all about, right?

If you can do well in a broad variety of classes, it proves that you're well-rounded. Colleges like to see that.
At the end of the day, colleges are looking to get well-rounded individuals and spur them onto their true passion for deep, intensive study. This is to help create future lawyers, doctors, businessmen, etc.
That said, keep taking a diversity of classes.
