i don't think you should take her...i am scandanavian and a semi-vegan as well...and it's our belief that eggs are foods of satan...if you take her to this easter egg hunt then she might think you are making fun of her or insulting her..which could be the end of you short termed relationship =)
as an alternative..you should consider taking her to a "balavihar"...which is a scandanavian dance party...with all vegan food choices...so there's nothing to worry about..

My general feeling is that people who are vegan tend to be pretty militant about being vegan and even if she isn't, it's just not worth taking the chance since you don't know if she is or isn't.
Why not take her out on something more casual and fun like take her to play pool. That gives you plenty of chances to make jokes and get to know each other.

Be careful of the response that talks about "balavihar". I was interested in finding out what that was and it's certainly not a Scandinavian thing. I went to a website and it said that "Balavihar" is:

I think overall, it would be a good idea but you have to be careful with her being vegan. If she's a cool vegan and doesn't mind other people around her eating meat and dairy products, then take her. If she's a PETA-style vegan then be careful and take her to the Tofu Hunt.
That's a really cute idea. As a girl, I'd love that but like everyone else said, be careful with her being a vegan. If anything, being Scandanavian means that she'll like you taking her to American stuff. Good luck and tell us how it turns out!
