There are two things you should consider and try to balance. The first is getting good grades without overloading yourself, and the second is having a challenging curriculum to show colleges.
Getting great grades -- getting mostly A's and a few Bs in honors classes instead of AP classes is much better than getting mostly Bs in AP classes. Don't overload yourself with too many APs and definitely don't get into the cycle of thinking that you can take a lot of APs to make up for poor grades in the past. It almost never works and you just end up drowning in work with even worse grades. Ultimately the primary thing a college will look at when they're deciding to admit you is your GPA. Get lots of A's.
A challenging workload - if you can handle it, take as many APs as you can fit in. Particularly with science and math classes. Colleges love to see students who have demonstrated they are interested in and can do well in challenging math and science courses. Even if you're going to be a liberal arts majors, getting a solid foundation in math and science will give you analytical skills for a lifetime.
Good luck!
