I'm a junior at my school in Georgia and I have a 3.79 GPA. I've taken two honors English classes already, honors chemistry, ap world history, and took Algebra I in 8th grade, so I'm ahead in math in my grade level. I'm also part of the Interact, S2S, National Honor Society, Cross Country, and Soccer. However, my SAT scores aren't all that great. I have a combined SAT score w/ writing of 1620: 470 in Reading, 610 in Math, and 540 in Writing. For my senior year, I also plan on taking AP Gov't, AP English, AP Calculus, and AP Physics. What are my chances? If not University of Florida, what about University of Georgia?

You should definitely focus on your SAT scores. It seems like your grades and classes will be fine; I'd be most worried about your test scores. Take a class or get some tutoring to help you improve your core areas and raise your overall score.
Your chances are great because you've started thinking about college NOW instead of during your senior year! You do need to work on your SAT scores, but you've got plenty of time to bring them up - study, get some help, and you'll be fine. An added perk of getting the help you need to get into Florida? You'll be better prepared for AP English and Calculus next year! You know what you need to do, just do it!
