Reading these articles about how hard it is to win athletic scholarships makes me wonder if it's easier to just do well in school and get scholarships based on SAT scores. What do you guys think?

It is actually much easier to get merit aid than atheletic because there are such few atheletic scholarships available.
With all of my kids, I've emphasized academics over athletics. I love sports and so do my kids, but I think most parents know that for 99.9% of us, our children will not become professional athletes. College athletic scholarships are nice but they are extremely difficult to attain.
If you are truly talented in a sport, then you should pursue it for the love of that sport but really, for most students, your chances of being a professional athlete or even winning an athletic scholarship are low. Do well in school and on your SATs and you'll have a good shot at getting scholarships. In some states scholarships are based on ACT scores for state schools so be sure to check on that.
